A Cake Recipe With Chocolate and Zucchini
Ingredients Needed:
Half C. to 1 C. chocolate chips
three courgettes, about 6 inches in length, cut into shreds (roughly two cps)
1 teaspoon cinnamon
two A half cup of cake flour
three free-range eggs
A half cup of butter
1 t. vanilla flavor
1/2 cup sugar
One Cup brown or muscovado sugar
1/2 cup canola oil
1/2 cup buttermilk
four T, cocoa powder
One teaspoon salt
2 tsp cooking soda
Directions:
Whilst you are preparing the ingredients, set your oven so it preheats to 325 degrees F / 160 degrees C.
Grease a 9″ x 13″ cake pan and put to one side.
In a large mixing bowl,mix the brown and white sugar, butter and oil.
Break in the eggs, the vanilla and the buttermilk and mix well.
With a sifter or sieve, sieve the cinnamon, cocoa, flour, salt and soda to make one.
Add the powder mix to the wet mix and stir well
Stir in the shredded zucchini and give it a few stirs.
Pour into the cake tin and dot the top with chocolate chips.
Put into the pre-heated oven and cook for 45 mins.
Allow it to cool down a bit, and let it cool on a wire rack.
